Heat convection oven to 300°F (standard oven: 350°F). Toast walnuts.* Grind cooled walnuts in food processor. Set aside. Lightly spray sheet pans with vegetable cooking spray. Place parchment paper on prepared sheet pans.
Mix butter and sugar in 20 qt. bowl of mixer fitted with paddle attachment until creamy. Add eggs and vanilla, mixing until fully incorporated. Blend together flour, baking powder and salt in large bowl. Gradually add to butter mixture, mixing until well blended. (Dough will be thick.) Using wooden spoon or with hands, work 1 lb. 8 oz. HERSHEY'S Mini Semi-Sweet Chocolate Chips and ground walnuts into dough. Divide dough into four equal parts. Shape each part into a rectangular log approximately 4 inches in diameter and 14 inches long by 1 inch thick. Place on prepared sheet pans.
Bake 25 to 30 minutes or until logs are set. Remove from oven, cool on sheets pans 20 minutes. Using serrated knife and sawing motion, cut logs into 1 inch diagonal slices. Discard end pieces. Place slices cut sides down and close together on sheet pans.
Bake 6 to 8 minutes. Turn each slice over; bake an additional 6 minutes or until cookies are dry and crisp (do not over bake). Remove from oven; cool on sheet pans. Remove from sheet pans to wire rack.
Combine remaining 1 lb. 8 oz. HERSHEY'S Mini Semi-Sweet Chocolate Chips and shortening in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 minutes; stir. Microwave an additional 15 seconds at a time, stirring after each heating, until chips are melted. Drizzle tops of cookies.
