Mix together butter and sugar in 20 qt. bowl of mixer fitted with paddle attachment until creamy. Add corn syrup, eggs, lemon and vanilla extracts, mixing until fully incorporated.
Place 1 lb. 8 oz. HERSHEY'S Premier White Creme Chips in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 minutes or until smooth when stirred; blend into butter mixture. Blend together flour, baking soda and salt in large bowl. Gradually add to butter mixture, mixing until well blended. Refrigerate 1 hour or until dough is firm enough to handle.
Heat convection oven to 300°F (standard oven: 350°F). Lightly spray sheet pans with vegetable cooking spray. Place parchment paper on prepared sheet pans. Using #40 scoop, shape dough into balls; roll in pecans, lightly pressing pecans into dough. Place on prepared sheet pans.
Bake 8 to 12 minutes* or until golden around edges. Cool completely on sheet pans.
Prepare WHITE CREME CHIP GLAZE: Place HERSHEY'S Premier White Creme Chips and shortening in large microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir until smooth. Drizzle WHITE CREME CHIP GLAZE over each cookie.
Step 4: If using convection oven, rotate pans one-half turn (180°) after 4 minutes of baking.
