  • 3 lbs.
    old-fashioned rolled oats
  • 1 oz.
    vanilla extract
  • 1 lb.
    sliced almonds
  • 9 oz.
    sweetened coconut flakes
  • 1 lb. 8 oz.
    HEATH Toffee Bits, medium grind (Item# 60550)
  • 10 oz.
    coconut oil
  • 10-2⁄3 fl. oz.
    honey
  • 11 oz.
    light brown sugar
  • 8 oz.
    additional HEATH Toffee Bits, medium grind (Item# 60550)
  • 1 tsp.
    salt

Heat convection oven to 250°F (standard oven: 300°F). Lightly spray four 18x26-inch full sheet pans with vegetable cooking spray. Place parchment paper on prepared sheet pans.

Blend oats, almonds, coconut flakes and 1 lb. 8 oz. HEATH Toffee Bits in large bowl. Set aside.

Using wire whisk, stir together coconut oil, honey, light brown sugar, additional 8 oz. HEATH Toffee Bits and salt in large heavy-bottomed saucepan over medium heat until mixture comes to a boil. Let boil 30 seconds stirring constantly, or until sugar dissolves. Remove from heat; stir in vanilla.

Pour sugar mixture over oat mixture; stir. When cool enough to touch, mix thoroughly with your fingers, scrunching sugar mixture into oat mixture until completely coated. Transfer to prepared pans, dividing and spreading evenly.

Bake 30 minutes, stirring halfway through baking time, rotating pans. Remove from oven to wire racks; cool. Break up into desirable size pieces. Store in airtight containers in cool dry place.
