Ingredients

  • 1-1⁄2 Tbsp.
    powdered instant coffee or espresso
  • 3 fl. oz.
    hot water
  • 2 lbs. 3 oz.
    all-purpose flour
  • 1 Tbsp.
    salt
  • 1 Tbsp.
    baking powder
  • 1 Tbsp.
    ground cinnamon
  • 1 lb. 8 oz.
    salted butter, softened
  • 1 lb. 8 oz.
    light brown sugar
  • 12 oz. (1-1⁄2 cups)
    granulated sugar
  • 3 fl. oz.
    HERSHEY'S SPECIAL DARK Syrup, Bottle (Item# 31850)
  • 10-1⁄2 oz. (6 large)
    eggs
  • 1⁄2 fl. oz.
    vanilla extract
  • 1 lb. 2 oz.
    HERSHEY'S SPECIAL DARK Chocolate Chips (Item# 14122)
  • 1 lb. 2 oz.
    HERSHEY'S Premier White Creme Chips (Item# 42663)
  • 1 lb. 2 oz.
    chopped pecans

Heat convection oven to 300°F (standard oven: 350°F). Lightly spray sheet pans with vegetable cooking spray. Place parchment paper on prepared sheet pans.

Dissolve instant coffee in hot water. Set aside. Blend together flour, salt, baking soda and cinnamon in large bowl. Set aside. Mix together butter, brown sugar, granulated sugar and HERSHEY'S SPECIAL DARK Chocolate Syrup in 20 qt. bowl of mixer fitted with paddle attachment until creamy. Add eggs and vanilla, mixing until fully incorporated. Gradually add flour mixture and coffee mixture, mixing until well blended. Stir in HERSHEY'S SPECIAL DARK Chocolate Chips, HERSHEY'S Premier White Creme Chips and pecans. Using #24 scoop, drop dough 2 inches apart on prepared sheet pans.

Bake 8 to 12 minutes* or until lightly browned; cookies will be slightly moist in center (do not over bake). Cool approximately 5 minutes; remove from sheet pans to wire rack. Cool completely.

Tip

Step 3: If using convection oven, rotate pans one-half turn (180°) after 4 minutes of baking.
